Veggie Sandwich


Veggie Sandwich

Yield: 1 sandwich

Prep Time: 5 minutes

Total Time: 5 minutes


Ingredients:

2 slices of bread

2 heaping tbsp. hummus

1/2 an avocado sliced

sliced cucumber

sliced bell pepper

sliced tomatoes

spinach


Directions:

  1. Slice up all your veggies.

  2. Spread hummus on your bread.

  3. I like to place my cucumbers on one side of the bread and my bell peppers on the other.

  4. I then layer on the tomatoes avocado and spinach.

  5. Cut your sandwich in half.

  6. Enjoy!



Notes:


*This is a wonderful quick and simple lunch or dinner on a lazy Wednesday night. You can substitute your favorite toppings, veggie sandwiches are so versatile! I enjoy adding things like mustard, red onion, pepperoncini, and pickles just to name a few.


*I have also wrapped this in a tortilla or enjoyed it on a toasted bagel as well. It's pretty much tasty however you serve it up!
