This is 100% better than regular whipped cream. Pair it with fresh strawberries or a piece of pie and you will be in heaven!
Vegan Whipped Cream
Yield: about 1 cup
Prep: 5 minutes
Total Time: 5 minutes
1 can coconut cream (refrigerated overnight)
1-2 tbsp. sweetener of choice (maple syrup or powdered sugar)
1 tsp. vanilla extract
In a large mixing bowl or standing mixer add your coconut cream. You only want to spoon out the cream not the liquid mixture at the bottom of the can.
Now add your vanilla and sweetener of choice and begin to mix together either with the standing mixer or hand mixer both on medium speed. I would recommend starting with 1 tbsp. of sweetener and adjust if needed.
Beat your mixture until incorporated together and light and fluffy. Generally this takes about 1-3 minutes.
Once it looks like whipped cream consistency you are done. Do not over mix your whipped cream.
*I have made this with both maple syrup and powdered sugar and both are delicious. Although I do prefer the maple syrup version and only needed to add 1 tbsp. of maple syrup for a slightly sweet flavor.
*If you can not find coconut cream you could also use whole fat coconut milk. You will need to follow the same procedures and place it into the refrigerator overnight as well. I would not recommend using any light version of coconut milk as it will not contain enough fat to whip into cream.
