Vegan Peanut Butter Cookies (Gluten-Free)

Vegan Peanut Butter Cookies (Gluten-Free)

Yield: 16-18 cookies

Prep: 10 minutes

Total Time: 20 minutes

Ingredients:

1 cup unsweetened peanut butter

1 cup oat flour (gluten-free oats ground into flour)

2/3 cup coconut sugar

1 tsp. baking soda

1/8 tsp salt

2 tsp. vanilla

1/4 cup unsweetened applesauce


Directions:

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Take oats and blend in blender until flour like texture.

  3. In standing mixer or bowl cream peanut butter and sugar together.

  4. Add vanilla and mix.

  5. In a separate bowl mix oat flour, baking soda and salt.

  6. Slowly add dry ingredients to wet.

  7. Mix on low until incorporated. Cookie dough will be crumbly.

  8. Add applesauce and mix until dough forms.

  9. Take 1 tbsp. cookie dough and roll into a ball. Place onto ungreased cookie sheet. Continue this process until all the dough is used.

  10. Lightly press down the cookie with the palm of your hand. Take a fork and carefully make criss crossed marks onto your cookies.

  11. Bake 8-10 minutes until cookies are lightly golden on the edges.

  12. Let the cookies completely cool before removing them from the pan.

  13. Enjoy!


Notes:


*Allow the cookies to cool all the way before handling. They are very soft and will easily break apart if handled before they have cooled.

*This recipe does not have a strong sugary flavor but are mildly sweet. Perfect for dessert or a breakfast cookie for the kiddos. If you prefer a sweeter cookie I would recommend adding 1 cup of sugar instead of 2/3 cup.
