3 ripe avocados
1/4 cup red onion diced
1/2 cup cherry tomatoes quartered
1/2 cup cilantro chopped
1/2 lime juiced
1 clove garlic minced or 1/2 tsp. garlic powder
salt to taste
Chop up your onion, tomatoes and cilantro.
Slice avocado in half, take out seed and scoop avocado pulp out of shell, place in bowl.
Add lime juice, garlic, salt and mash until desired consistency. I like my guac smooth but still a little chunky.
Add onion, tomato and cilantro.
Stir gently to incorporate ingredients together.
Taste and season with additional garlic powder, salt and lime if needed.
Serve with fresh veggies and chips.
Note: This guac is super simple and not spicy at all. If you prefer spice I would recommend adding fresh jalapeño. I like to indulge just like anyone in chips and guac from time to time. It's hard to stop eating them am I right!? I try to serve mine with a few chips and fresh veggies to balance things out. It's is mighty tasty both ways!
