This simple one ingredient wonder came to me from a meme I was continuously seeing on Instagram. It was telling me to roast strawberries and eat them like candy. I did and wasn't the biggest fan of the texture although the flavor was amazing!
I didn't want to waste my hard work so I reimagined my plan and thus Roasted Strawberry Puree was born. Can I just say boy am I glad I stumbled upon this beauty. Whether you want to use it for an ice cream topping or on a big bowl of oats it will certainly be a welcomed addition!
Roasted Strawberry Puree
Yield: 1 cup
Prep: 5 minutes
Total Time: 4 hours 10 minutes
2 packs strawberries
Optional Add In's:
Squeeze of lemon juice
1 tbsp. sweetener of choice
Preheat oven to 200 degrees.
Wash, dry and remove stems from your strawberries.
Place them on an ungreased sheet pan in one single layer.
Roast for 2 hours, flip over, roast another 2 hours.
Pull out of the oven and allow them to cool for a few minutes before handling.
Place into food processor and process until smooth. You can add the fresh citrus and sweetener at this point if desired.
*Roasting the strawberries pulls out the sweetness and gives them an amazing flavor. I like the addition of the citrus and a small amount of sweetener to round out the flavor but it is not needed if you don't have any on hand.
*For the optional sweetener I used coconut sugar but maple syrup or really any other sweetener would work as well.
*This is great on oatmeal, pancakes, yogurt parfaits, chia seed pudding or even toast.
