Breakfast Quinoa Bowl

Breakfast Quinoa Bowl

Yield: 1 1/2 cups

Prep: 5 minutes

Total Time: 25 minutes


1/2 cup quinoa

1 cup unsweetened almond milk

1/2 tsp. cinnamon

1/4 tsp. nutmeg

1/2 tsp. vanilla

1 tbsp. pure maple syrup

Topping: cinnamon, unsweetened coconut flakes, sliced almonds, raspberries, blueberries, strawberries and almond butter


  1. In a medium sized saucepan add your quinoa, almond milk, cinnamon, nutmeg, vanilla and maple syrup.

  2. Stir until all ingredients are incorporated.

  3. Bring to a bowl over medium high-heat.

  4. Once boiling immediately turn to low and bring to a simmer.

  5. Cover and simmer for 15 minutes.

  6. Take off heat and allow to set for an additional 5 minutes.

  7. Top with a dash of cinnamon, fresh berries, coconut, almonds, and drizzle with almond butter.

  8. Enjoy!
