Banana Nut Drop Cookies

Banana Nut Drop Cookies

Yield: 18-20 cookies

Prep: 10 minutes

Total Time: 20 minutes


Ingredients:

2 cups oat flour (rolled oats ground into flour)

1/3 cup coconut sugar

1/3 cup unsweetened applesauce (or any nut butter)

2 bananas mashed

1/4 cup walnuts chopped

1 tsp. baking powder

1/2 tsp. cinnamon

1 tsp. vanilla

pinch of salt


Optional mix ins: 1/2 cup chocolate chips, raisins, coconut or any of your other favorite dry cookie ingredients.


Directions:

  1. Preheat your oven to 350 degrees.

  2. Take two cups of rolled oats and blend into a flour and pour into a medium sized bowl.

  3. Mix in the rest of your dry ingredients: baking powder, cinnamon and salt.

  4. In another bowl or a standing mixer cream your apple sauce and coconut sugar together.

  5. Add you mashed banana and vanilla and mix just until incorporated.

  6. Slowly add your dry ingredients to your wet ingredients until incorporated.

  7. Fold in your chopped walnuts.

  8. On a greased cookie sheet (I used coconut oil) drop 1 heaping tablespoon of cookie dough for each cookie about 2 inches apart.

  9. Bake for 8-10 minutes until slightly golden.

  10. Allow cookies to cool prior to handling.

  11. Enjoy!


Note: This recipe is so versatile! You can use any nut butter in place of apple sauce and it will be tasty! The optional mix ins add that little extra something to make it your own. I have enjoyed the raisin version myself and it is mighty delicious! Use gluten-free oats if you are looking to keep this recipe gluten-free.


*My original recipe was made with peanut butter however I felt the apple sauce gave a more banana bread flavor! I love both versions!
