I’ll admit it I am not a morning person, never have been, never will be. I am always in a rush and need quick and easy breakfast items for on the go. I wish I could wake up early and take my time but that snooze button calls out to me every day! I hate to say it but I often eat breakfast in my car or at my desk at work. Ideal no, reality yes.
Here are three of my go to breakfast items that take five minutes or less to make and keep me full until lunch!
Let’s be real, most of us grew up eating buttered toast or toast with jam. Nothing too creative or filling here. I absolutely love avocado toast like most but there are so many combinations you can make!
For breakfast, I usually have two pieces of toast to keep me full until lunch. One sweet and one savory. Some of the combinations below are deliciously satisfying! For your sweet fruit filled combinations I always start with a hearty bread and nut butter. I use either peanut butter or almond butter. Then I simply fill my toast with the good stuff: fresh fruit, nuts, seeds, coconut, goji berries or whatever my heart desires.
For savory toast, I will often have hummus toast filled with fresh veggies or avocado toast. Sometimes I get really wild and build hummus, avocado veggie toast. Yummm!
I know I know boring, right? Not in the slightest. I mean take a look at these creamy oats filled with pure maple syrup and cinnamon roasted almonds. The great thing about oats is they are so versatile. You can cook them on the stove top in a few minutes or zap them in the microwave if you are in a hurry.
Overnight oats are a great option to give yourself back even more time on those busy weekday mornings. One of my favorite overnight oats recipe is simply oats, almond milk, cinnamon, apples, raisins and walnuts. I usually don’t measure my ingredients for this recipe. I simple put about ½ cup oats in a glass Tupperware container and add in my apples, cinnamon, raisins and walnuts. Then I top off my oat mixture with almond milk until the oats are covered. When I wake up I have creamy overnight oats ready to go!
Yet another very versatile option in the morning that is quick, easy and nutritious! Smoothies are one of my favorite breakfast items. Number one reason for this well I love smoothies, number two they are portable! For a not so morning person like me portable breakfast is the best!
To keep you full until lunch try adding things like nut butters, chia seeds, flax seeds, hemp seed and greens to your smoothies. These will add healthy protein, fat and nutrients to your morning breakfast. One of my favorite smoothie combos is frozen banana, peanut butter, almond milk and try adding a little spinach to this combo to get your greens in. Top off your smoothies with chia seeds, flax or hemp seeds for an extra kick of nutrients and calories to keep you full.
The trick to a good smoothie is frozen fruit and a good blender. I love my Vitamix and use it every day.
My advice, keep breakfast simple during the week and go all out on the weekends! #pancakesundays
